Polpettes are delicious little-fried morsels of potatoes and feta cheese, flavored with dill herb and lime or lemon juice. It is a delicious appetizer and making theses fairly simple.

500g potatoes
115g feta cheese
3 tbsp chopped fresh dill
4 spring onions, finely chopped
1 egg, well beaten
1 tbsp juice of the lemon
Salt and black pepper
3tbsp olive oil
Flour for dredging

Boil medium sized potatoes without removing their skins in lightly salted water until it becomes soft. Take out from the water and remove the skin, while it still warm. Keep in a pot and mash it properly. Crush and combine the cheese with the mashed potatoes and include dill, spring onions, egg, and the lemon juice and add salt and black pepper as per your taste. (The feta cheese is salty, so taste before you adds salt). Combine all the ingredients well.
Cover this mixture and make colder until it is firm. Now make small balls and slightly flatten them. Dredge with the flour.
Heat the oil in a frying pan and fry the polpettes until they become golden brown on each side. Drain on kitchen paper and serve warm with salad and sauce.
