Pumpkin Soup Recipe

Ingredients: Pumpkin Soup Recipe



Plain pumpkins puree                    3 cups

Onion, chopped                                2 cups

Olive oil                                             1 tbsp

Vegetable stock, non fat                 4 cups

Whole wheat flour                           2 tbsp

Garlic, minced                                   ½ tsp

Black beans                                        ½ can

Cumin powder                                   ½ tsp

Salt                                                      to taste

White pepper powder                       ¼ tsp

Nutmegs grated or dust                   for garnish



Preparation Method: Pumpkin Soup Recipe


Caramelize onion in the olive oil in a frying pan over medium heat.

Add the flour and cook for 2 minutes or until mixture is slightly thickened.

Add vegetable stock and whisk, then add pumpkin, cumin powder, salt, garlic and white pepper.

Bring the pumpkin soup to a simmer, whisking occasionally and cook for around 15 minutes, stirring occasionally to avoid scorching.

Add black beans and cook for another 15 minutes, stirring occasionally to prevent the scorching.
