Pumpkin Soup Recipe

Plain pumpkins puree, 3 cups

Onion, chopped, 2 cups

Olive oil, 1 tbsp

Vegetable stock, nonfat,             4 cups

Whole wheat flour, 2 tbsp

Garlic, minced, ½ tsp

Black beans, ½ can

Cumin powder, ½ tsp

Salt, to taste

White pepper powder, ¼ tsp

Nutmegs grated or dust, for garnish

Caramelize onion in the olive oil in a frying pan over medium heat.

Add the flour and cook for 2 minutes or until mixture is slightly thickened.

Add vegetable stock and whisk, then add pumpkin, cumin powder, salt, garlic, and white pepper.

Bring the pumpkin soup to a simmer, whisking occasionally and cook for around 15 minutes, stirring occasionally to avoid scorching.

Add black beans and cook for another 15 minutes, stirring occasionally to prevent the scorching.
