125g green lentils
2 celery stalks
2 garlic cloves
4 tbsp oil
125mldry white wine
Salt and pepper
2 thyme sprigs
2 tbsp crème fraiche
1 tbsp chopped parsley

Cover the lentils with plenty of cold water and soak for 4 hours.
Trim and wash the carrot and celery, dice them finely. Chop the onion and garlic finely. Put them all into a large microwave dish with the oil. Make it brown by heating for 5 minutes at 600 watts, stirring once.
Drain the lentils and add to the dish. Add thyme, bay leaf, salt and pepper. Cover and cook for 6-8 minutes, stirring from time to time.
Uncover and stir the crème fraiche into the vegetables. Reduce, uncovered for a further 4-5 minute.
Remove the herbs and leave the vegetables to stand for few minutes longer.
