If you are going to cook this chicken recipe, you need following ingredients in given ratio, weight or amount.
- Chicken needed 1 kg
- Turmeric powder ¼ tsp
- One piece of ginger (1 inch)
- Chili powder ¼
- Lemon juice or vinegar 1 tsp (only one of them)
- Garlic cloves 5
- Green chili 3-5
- Salt according to need
- Coriander ¼ tsp
- Medium size onions 3
- One large size Tomato, blanch, remove skin and prepare puree
- Slit green chili 2
- Springs curry leaves 3
- Garam masala powder ¼ tsp
- Pepper powder ¼ tsp
- Juice of one lemon

Now, follow every bit of directions carefully and continue preparation of Kerala Chicken Roast.
Wash, clean and cut chicken into average sized pieces.
Use ingredients for marination and prepare a paste of all.
Marinate all pieces of chicken completely with this prepared paste and let it dry for 1 hour.
Pour the oil in a pan over fire and cut onions into thinner and smaller pieces.
Put the onion pieces in hot oil and fry them completely and keep them aside.
Use same hot oil for frying the chicken pieces and keep the pan covered.
Don’t let chicken get brown, but it must be cooked internally.
Now whole process is completed, drain and keep them aside.
Take 2 tsp of oil or use old one for cooking curry leaves and split green chilies just for 1 minute.
Add paste of tomato in this and cook for one minute.
Put all chicken pieces in this and let it roast until they become dry.
Combine tomato paste to all chicken pieces completely.
Mix garam masala and pepper powder.
Add the salt and lemon juice and mix well.
Garnish with the fried onion over roast.
