Welsh Eggs Recipe Like Birds’ Nest
A recipe from an old hand-written cookery book of Welsh dated 1887. These are also known as Welsh Eggs because they resemble Scotch Eggs but they have leeks in the filling.

Welsh Eggs Recipe Like Birds’ Nest
Ingredients:
6 eggs, hard-boiled
1 leek, chopped
Flour combined with salt and paprika
2 tsp sunflower oil
1 lemon juice and rind
2 cups fresh white bread crumbs
1/2 cup vegetarian shredded suet
4 tbsp chopped fresh parsley
1 tsp dried thyme
1 egg, beaten
Salt and black pepper
1/2 cup dried breadcrumbs
Oil, for deep frying
Lettuce and tomato wedges, to garnish
Welsh Eggs Recipe like Birds’ Nest
Preparation Method:
Peel the hard-boiled eggs and toss in the seasoned flour. Set aside until required.
Fry the leeks in sunflower oil for about 3 minutes until softened but not browned. Remove from the heat and leave to cool then mix with the fresh breadcrumbs, lemon juice, lemon rind, vegetable suet, herbs, salt, and pepper. If the mixture is too thick and dry add a little water.
Shape the mixture around the boiled eggs, molding it firmly with the hands then toss first into the beaten egg and the dried breadcrumbs. Set aside on a plate to chill for 30 minutes. This will firm them up before cooking.
Pour enough oil in a deep fat fryer. Fry the boiled eggs for about 3 minutes in 2 batches. Remove and drain on kitchen paper.
Serve cool, cut in half to reveal the birds’ nests, garnished with lettuce and tomato edges.
